CORN CASSEROLE 
2 cans cream style corn
1 sm. can whole kernel corn, drained
1 lg. bell pepper, chopped
1 c. celery, chopped
1 stick butter
1 pkg. Mexi-Kits cornbread mix
3 eggs, slightly beaten
Cheese, grated (opt.)

Saute onion, celery and bell pepper in butter; add to the corn, then add eggs and Mexi-Kits. Mix all together and put in buttered casserole. Bake at 350 degrees for 30 minutes. Sprinkle with grated cheese, return to oven until cheese is melted.
