TEXAS BARBECUE | |
1 beef brisket, well trimmed 1/3 c. salt 2 tsp. cayenne pepper 1 bottle your favorite barbecue sauce Mix salt and cayenne pepper together in small dish. Rub mixture into meat all over. Place brisket in roasting pan, fat side down. Cover well with foil, sealing pan. Bake in 250 degree oven for 6 hours. DO NOT OPEN foil. Then pour barbecue sauce over meat. Cook 1-2 hours more, depending on size of meat, covered. Remove meat from oven. Wrap in foil for approximately 20 minutes. Slice across grain. Serve alone or on buns; use sauce in pan over meat. |
