STUFFED PEPPERS 
4 lg. green peppers
1/2 c. olive oil
1 lb. ground beef
1/2 c. chopped onions
1 tbsp. parsley
1 1/2 c. crushed tomatoes
1/4 c. water
1/4 c. minced celery
1 pkg. mozzarella cheese, cut in strips
1 1/2 c. cooked rice

Cut centers out of peppers, taking out all white lining and seeds. Drop in boiling water and boil 5 minutes. Set aside to drain.

Heat oil in skillet, add ground beef and onions until brown; stir in rice and parsley and season to taste. Fill peppers with rice and meat mixture. Place peppers upright in a 2 quart baking dish. Cover with cheese and tomatoes. Bake at 350 degrees for 15 minutes. Serves 4.
