STUFFED TOMATOES 
8 med. tomatoes
8 slices bacon
1/2 c. minced celery
1/2 c. minced onion
1/4 tsp. tarragon
1/2 pkg. (8 oz. size) Pepperidge Farm herbed stuffing
Salt & pepper to taste

Scoop out inside of tomatoes and save for stuffing. Salt and pepper inside of tomatoes. Fry bacon until crisp and set aside. Pour out most of grease from frying pan and saute celery, onion, tarragon, bread crumbs and scooped out tomato flesh. Stir until cooked. Crumble bacon in stuffing mixture. Fill the tomatoes. Bake at 375 degrees for 25-30 minutes. 8 servings.
