LOW FAT FRIED CHICKEN 
4 (4 oz. ea.) pieces skinless, boneless chicken
3/4 cup water
1 tbsp. oil

COATING:

1/3 cup all-purpose flour
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. cayenne pepper
1/4 tsp. onion powder or garlic powder
1/8 tsp. black pepper

Combine flour and spices in plastic bag or in bowl. Dip chicken in water then coat in seasoned flour.

Heat a tablespoon of oil in large nonstick skillet. Quickly add coated chicken. Brown over medium heat 5 to 10 minutes per side until golden brown on all sides.

Preheat oven to 350°F.

Remove chicken from skillet and place on a cookie sheet which has been sprayed with non-stick vegetable spray or Pam.

Bake at 350°F until done (approximately 30 minutes).

Serves 4.
