KANSAS TURKEY & DRESSING 
10-12 lb. turkey
1 loaf white bread, dried and broken into bite size pieces
1 c. celery, chopped
1/2 - 3/4 c. onion, chopped
3/4 c. butter, melted
1/2 tsp. salt
1/2 - 1 tsp. sage
1/2 - 1 tsp. poultry seasoning
1-2 eggs
1/4 - 1/2 tsp. pepper
1/3 - 1/2 c. hot water

Melt butter and cook onion and celery in skillet until tender. Put torn pieces of dried bread in large roaster or pan. Add seasonings. Pour onion and celery with butter over bread. Stir well with wooden spoon.

Add eggs and hot water as needed for moisture until bread is just moist enough to cling. Mix with hands until thoroughly mixed. Stuff cleaned turkey breast cavity and then the neck cavity. Do not pack. Cook turkey according to package directions for stuffed turkey.
