RHUBARB COBBLER | |
3 c. rhubarb 3/4 c. sugar 1/4 c. sifted flour 6 tbsp. water TOPPING: 1 c. flour 1/2 tsp. salt 1/4 c. shortening 3/4 c. milk 2 tsp. baking powder 1/4 c. sugar 3/4 c. oatmeal Heat oven to 400 degrees. For base divide rhubarb evenly. Combine sugar and flour and sprinkle over rhubarb. Add 6 tablespoons water; mix with rhubarb. For topping, mix together flour, baking powder, salt, and sugar into a bowl. Cut in shortening until it resembles coarse crumbs. Stir in oatmeal; add milk. Stir lightly until dry ingredients are moistened. Spoon topping over rhubarb. Bake at 400 degrees for 20-30 minutes. |
