BRANDIED SWEET POTATOES | |
1 1/4 hours before serving: 1. Cook 6 large unpared yams in boiling, salted water 25 minutes or until tender. Drain and cool. 2. In a 1 quart saucepan, mix: 1/2 tsp. nutmeg or cinnamon 2 tsp. salt 1/2 c. granulated sugar Stir in 1 cup water. Cook over low heat until sauce is clear. Stir in 1 tablespoon lemon juice and 1/3 cup brandy. 3. Heat oven to 375 degrees. Peel potatoes; slice crosswise, 1/4-1/2 inch thick. Put into buttered shallow baking dish. Pour on sauce, then bake 30 minutes or until glazed; basting occasionally. 4. When glazed, sprinkle with miniature marshmallows and broil until golden, if desired. |
