GLAZED LEMON BREAD 
3 tbsp. oil
3/4 c. sugar
2 tbsp. lemon juice
2 eggs
1 3/4 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 tbsp. grated lemon rind

LEMON GLAZE:

1 tbsp. lemon juice
2 tbsp. sugar

Mix oil and sugar, stir in lemon juice. Add eggs one at a time, beat thoroughly. Mix flour, baking powder, salt; add to mixture alternately with the milk. Stir in lemon rind. Grease and flour 8 x 4 x 2 inch loaf pan. Bake at 325 degrees for 45 minutes.

Brush with glaze. Return to oven 5 minutes. Brush again. Bake again 5 minutes. Let stand in pan 10 minutes. Bread is best to let stand for 1 day before cutting. Makes 1 loaf.
