INDIVIDUAL CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
1 tsp. vanilla
Cool Whip
Strawberries, cherries, or canned pie filling
1 tbsp. lemon juice
2 eggs
1 box vanilla wafers

Mix the cream cheese, lemon juice, sugar, eggs, and vanilla until smooth and creamy. Place paper baking cups into muffin tins. Place a wafer inside each baking cup. Spoon mixture over wafer. Bake at 350 degrees for 10-15 minutes. Cool and top with Cool Whip and fruit. Refrigerate. Makes 20.
