RICE PUDDING 
1 c. cooked rice
1/2 c. sugar
3 eggs
1 med. can fruit cocktail (including juice)
1/4 tsp. cinnamon
1/2 c. raisins (if desired)
3 tbsp. butter

Melt butter in same baking dish you will be making the pudding. Cook rice and pour butter from baking dish into rice; mix with fruit cocktail, sugar, cinnamon, raisins and beaten eggs. Bake at 350 degrees 1 hour covered. Double recipe for bigger crowd.
