RICOTTA COOKIES 
1 lb. butter
2 c. sugar
3 eggs
1 lb. Ricotta cheese
2 tsp. vanilla
1 tsp. salt
4 c. all-purpose flour
1 tsp. baking soda

Cream butter and sugar. Add eggs, cheese and vanilla. Add dry ingredients. Mix well. Spoon onto ungreased cookie sheets. Bake in 350 degree oven for 10 to 12 minutes or until just barely browned. Frost when cooled. Icing for cookies: 2 tbsp. butter, soft 2 tbsp. hot water 1 tsp. vanilla

These cookies have the taste of a very soft sugar cookie. They also stay soft.
