POTATO ROLLS 
1 c. milk
2 tbsp. sugar
2 tsp. salt
1/2 stick butter
1 c. warm water
1 pkg. yeast
2 eggs, beaten
1 c. instant potato flakes
4 1/2 to 5 c. flour

Scald milk, stir in sugar, salt, and butter. Cool to lukewarm. Put water in large bowl. Add yeast, stir until dissolved. Stir into this the lukewarm milk mixture, eggs, instant potatoes and 3 cups of flour. Beat until smooth.

Stir in enough additional flour to make a slightly stiff dough. Turn out on floured board. Knead until smooth. Place in greased bowl turning to grease top. Cover, let rise 1 hour. Punch down and turn out on floured board. Divide into 1/2 and each 1/2 into 12 smooth balls. Place into 2 greased 9 inch round pans. Cover and let rise about 30 minutes. Bake 400 degrees about 20 minutes. Makes 2 dozen rolls. Cool on wire rack.
