GREEN TOMATO PIE 
3 c. sliced green tomatoes
1 1/2 cups brown sugar
3 tbsp. flour
1/4 tsp. salt
3/4 tsp. cinnamon
5 tbsp. lemon juice
1 tsp. lemon flavoring
2 tbsp. butter
Pastry for a 2 crust pie

Combine tomatoes, sugar, flour, salt, cinnamon and lemon juice and flavoring. Line 9-inch pie pan with pastry. Pour in the filling. aDot with butter and cover with top crust. Bake at 450°F for 10 minutes. Reduce temperature to 350°F and bake about 40 minutes longer.
