GREEN TOMATO PIE 
6-8 med. green tomatoes
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. cinnamon
3/4 c. sugar
2 tbsp. cornstarch
1 tbsp. butter
Pastry for 9 inch double pie crust

Peel and slice tomatoes. Add to this the next 4 ingredients in saucepan and cook 15 minutes, stirring frequently.

Mix sugar and cornstarch together, then add this to saucepan mixture. Cook until clear, stir constantly. Add butter and then cool slightly.

Line 9 inch pan with pastry and pour in mixture. Cover with top pastry with several gashes to let steam escape. Bake at 450 degrees for 40-50 minutes. Serve warm or cool. (Tastes a little like an apple pie.)
