HALIBUT SUPREME 
1 (3 1/2 lbs.) halibut steak

BREAD DRESSING:

Bread cubes
Salt and pepper
Accent (lightly)
Sugar (lightly)
Sage (lightly)
Chopped carrots
Chopped celery
Chopped onions
Chopped green pepper
Add tuna or mushrooms if desired

Also will need:

Lemon juice
Cracker meal
Paprika

Filet halibut steak into quarters, following the bone structure. Slice each quarter flatwise, four or five slices to each quarter. Braise in butter the chopped onions, celery, carrots and green pepper (with tuna or mushrooms). Mix the braised ingredients with the bread cubes, salt and pepper, Accent, sugar and sage. After thoroughly mixing, moisten lightly with water.

Prepare baking sheet with cooking oil. Place a good spoonful of dressing on each slice of halibut. Roll into a roll and place on baking sheet, seam-side down. Season each roll with 1 teaspoon lemon juice, salt and pepper, Accent, cracker meal, and paprika; baste with butter. Bake in moderate 375 degree oven for 1/2 hour. Garnish and serve. Serves 16-20.
