SEAFOOD SALAD 
2 (7 oz.) lobster tails, cooked
3 hard-cooked eggs, chopped
2 gherkins, chopped
1 med. onion, sliced thinly
1/2 lb. shrimp, cooked and chopped
12 capers (optional)
4 tbsp. olive oil
2 tbsp. wine vinegar
1/2 tsp. sharp mustard
2 tbsp. mayonnaise
Salt, pepper, cayenne pepper
Greens

Dice lobsters and add remaining ingredients. Serve on a bed of mixed salad greens. Garnish with slices of pimentos and lemon wedges.
