CARAMEL-NUT TREASURES | |
1 c. (2 sticks) lightly salted butter, softened 3/4 c. lightly packed light brown sugar 1 tsp. vanilla 1 3/4 c. all-purpose flour 1/2 tsp. baking powder 1 bag semi-sweet chocolate chips About 25-30 Kraft caramels (light colored), cut in half Finely chopped walnuts or pecans 1. Heat oven to 325 degrees. Have ungreased baking sheets ready. 2. Cream butter, sugar and vanilla in large mixing bowl. Stir in flour and baking powder. Shape scant teaspoonfuls of dough into balls about the size of a marble. Place on baking sheet, leaving about 2 inches between cookies. Flatten slightly. 3. Bake until golden, about 15 minutes. Transfer to wire racks to cool. 4. Roll and flatten caramel halves so they are slightly smaller in diameter than the cookies. Put one caramel half on top of each cookie and four chocolate chips on top of the caramel circle. Place about 4 cookies at a time in the microwave, just until the chocolate chips are slightly melted (about 20-25 seconds in most microwave ovens). Spread the melted chocolate out on top of cookie and immediately sprinkle with the chopped nuts. |
