CHILI POT PIE | |
1 lb. ground chuck 1 sm. onion 2 sm. (14 1/2 oz.) cans tomatoes, mashed 1 (8 oz.) can tomato sauce 3 tbsp. chili powder or to taste Salt & pepper to taste 1/2 pkg. cooked, dried pinto beans or 2 cans of pinto beans Saute' onion in small amount of oil; add ground chuck and brown on medium high. Do onions until soft not brown. Salt and pepper to taste, pour grease off of meat, add tomatoes, tomato sauce, chili powder, and pinto beans. Cook for about 15 minutes on medium heat, if thick add water. Pour into casserole dish. TOPPING: 1 1/2 c. cornmeal mix 1 egg 1 c. or more buttermilk (very thin) Spoon over chili mixture. Cook at 400 degrees for 30 or 40 minutes or until brown. |
