MOIST CHOCOLATE CAKE 
2 c. sugar
3/4 c. shortening
1 1/2 c. boiling water
2 eggs
1 tsp. vanilla
2 c. flour
2 tsp. baking soda
3/4 tsp. salt
1/2 c. cocoa powder

Preheat oven to 350 degrees. In large bowl, cream together sugar and shortening. Add boiling water and stir. Sift and add to bowl the flour, baking soda, salt, and cocoa powder. Beat with electric mixer. Add 2 eggs and beat well. Stir in vanilla. Pour into greased and floured pans, two 9 inch round layers. Bake 25-30 minutes or 1 13 x 9 inch rectangle for 35-40 minutes or 24 cupcakes for 18-20 minutes.
