RED VELVET CAKE 
4 eggs
2 1/2 sticks butter
2 1/4 c. flour
2 c. sugar
1 oz. red food coloring
1 1/2 tbsp. cocoa
1 tsp. vanilla
1 c. buttermilk
1 tsp. baking soda

Make a paste of cocoa and food coloring. Cream sugar and butter. Add eggs, one at a time. Add cocoa paste. Add flour and soda alternately with milk and flavor. Pour into 3 greased and floured 9 inch cake pans. Bake at 325 degrees F. until cake springs back from touch.

BUTTER ICING:

3/4 lb. powdered sugar (sifted)
2 tbsp. milk
1 stick butter (softened)

Mix well. Spread on cake after it is cool.
