GAZPACHO 
4 c. cold tomato juice
1 sm. well minced onion
2 c. freshly diced tomatoes
1 c. minced green pepper
1 tsp. honey
1 clove crushed garlic
1 diced cucumber or sm. zucchini
2 scallions, chopped
Juice of 1/2 lemon and 1 lime or to taste
2 tbsp. wine vinegar
1 tsp. each tarragon and basil
Dash of ground cumin (available on spice shelf)
1/4 c. freshly chopped parsley
Dash of Tabasco sauce
2 tbsp. olive oil
Salt and black pepper to taste

Combine all ingredients and chill for at least 2 hours. Twenty to thirty minutes to prepare; 2 hours to chill. 6 servings.
