CREOLE 
1 tbsp. oil (optional)
1 med. onion, diced
2 tomatoes, peeled or 2 c. canned
2 tsp. salt
1 bay leaf
2 tsp. sweet basil
1/2 c. tomato sauce
3 c. cooked garbanzos
1/2 c. hot water
1/3 c. chunky peanut butter
Hot brown rice

Saute onions in oil or water in a skillet over low heat until tender. Add tomatoes, salt, bay leaf, sweet basil and tomato sauce. Cover and simmer 15 minutes. Add garbanzos. Mix hot water well with peanut butter and add to mixture. Cover and simmer 10 minutes longer. Serve in soup bowls over brown rice.

Yields 6 servings.
