MINTED WHITE BEAN SALAD 
2 tbsp. red wine vinegar
1 tbsp. chopped fresh mint or 1 tsp. mint leaves
1 1/2 tsp. olive oil
6 oz. rinsed drained, canned white beans
1/2 c. seeded and diced tomato
1/2 c. each chopped onion and diced red bell pepper
5 sm. calamata olives
1/8 tsp. each salt and pepper
12 bibb lettuce leaves
2 oz. feta cheese, cut into 4 triangles
Garnish: mint sprig

1. In medium mixing bowl combine 2 tablespoons water, the vinegar, chopped mint, and oil; add remaining ingredients except lettuce, cheese and garnish. Cover and refrigerate until ready to serve.

2. To serve, line serving platter with lettuce leaves; spoon bean mixture onto center of lettuce. Decoratively arrange cheese around bean mixture. Garnish mint sprig.
