HAWAIIAN MEATBALLS | |
1 1/2 lbs. hamburger 2/3 c. cracker crumbs 2/3 c. evaporated milk 1/2 c. chopped onion 1 tsp. salt 13 oz. chunk pineapple 2 tbsp. cornstarch 1/2 c. vinegar 2 tbsp. lemon juice 1 c. chopped green pepper 1 tbsp. pimiento 1/2 c. white sugar 2 tbsp. soy sauce 1/8 tsp. pepper Combine hamburger, cracker crumbs, milk, onion and salt. Shape into meatballs and brown in frying pan. Best if meatballs are very small. Drain pineapple, measure juice and add water to make 1 cup, blend in cornstarch until smooth. Mix in vinegar, sugar, soy sauce and lemon juice. Cook until thick and transparent. Add pineapple, green pepper, pimiento and mix well. Simmer in covered pan on low heat for 15 minutes. Pour over meatballs. Simmer another 15 to 30 minutes until done. |
