CHINESE FRIED WALNUTS 
6 c. water
4 c. California walnuts
1/2 c. sugar
Salad oil
Salt

Heat water to boiling in 4 quart saucepan. Add walnuts and bring to a boil; cook 1 minute. Rinse nuts under hot water, drain, wash pan and dry well. In large bowl mix warm nuts with sugar until sugar is dissolved. Heat about 1 inch salad oil over medium heat in saucepan to 350 degrees with slotted spoon. Add about 1/2 of nuts to boil, fry 5 minutes or until golden, stirring often with slotted spoon, place nuts in coarse sieve over bowl to drain; sprinkle very lightly with salt. Toss lightly to keep nuts from sticking together. Transfer to paper towels to cool. Fry remaining walnuts. Store in tightly covered container. Makes 4 cups.
