BEAN PIE 
3 c. cooked beans (great northern navy)
2 c. evaporated milk
5 eggs
2 tbsp. cornstarch
1/2 lb. butter
2 c. sugar
2 tbsp. cinnamon or 1 tbsp. cinnamon and 1 tbsp. nutmeg
1 tbsp. lemon extract

Cream sugar and butter together, then add cinnamon, cornstarch, and blend well. Add eggs, one at a time, mix well, then add beans and mix well. Add milk, and blend well. Pour into pie crust, bake for 5 minutes at 450 degrees, reduce heat to 375 degrees and cook until done. Makes 3 (9 inch) pies.
