2 eggs
3/4 c. sugar
1 2/3 c. evaporated milk
1 tsp. vanilla
2 c. mashed sweet potatoes
2 pie shells

Put first 4 ingredients in large mixing bowl and beat real good. Add 2 cups mashed sweet potatoes. Beat again for approximately 1 minute.

Pour into unbaked pie shells. Bake 350 degrees F. for 45 minutes or until firm. Remove from oven and serve plain or with Cool Whip on top after pie has cooled. Makes 2 pies.
