EGGPLANT CASSEROLE | |
1 c. Cheddar cheese, grated 1 lg. eggplant 1 lg. onion 1 lb. ground beef 1 bell pepper 1 lg. can tomato sauce 1 pkg. elbow macaroni noodles Brown meat and drain. Brown onion and pepper. Boil noodles and drain. Slice eggplant, boil and drain. Start with a layer of eggplant then put a layer of meat then sprinkle on a layer of onion and peppers. Put a layer of cheese. Keep going with the layers until all ingredients are used up with cheese on top. Bake at 350 degrees for 30 to 45 minutes or until all is heated through. |
