PINEAPPLE DREAM 
1 c. unflavored gelatin
1/2 c. unsweetened pineapple juice
1 tsp. coconut extract
1/2 tsp. pineapple extract
2 tsp. toasted unsweetened coconut
1/2 c. unsweetened pineapple
1 c. low fat cottage cheese
2 packets Equal
1 pkg. whipped topping mix
1/2 c. 2% milk

Sprinkle gelatin over pineapple juice in small saucepan. Allow to stand 5 minutes to soften. Add extracts. Heat just until gelatin is melted. Cool to room temperature. Place pineapple chunks in blender or food processor and mince (I remove half of the pineapple after it is partially ground up) then add cottage cheese and sweetener and puree. Mix into gelatin mixture. Set aside.

Combine topping mix and milk, beat until stiff peaks form. Fold into gelatin mixture (I add the pineapple I saved at this point.) Place into individual dessert dishes or a 4 cup bowl. On my guests dishes I place half of maraschino cherry with little slices around it. Chill at least 2 hours before serving. Makes 8 servings.
