BERRY MUFFINS 
3 c. flour
1 c. sugar
4 tsp. baking powder
1 tsp. salt
2 eggs (well beaten)
1 c. water
2/3 c. melted butter
2 1/2 c. thawed whole berries (raspberries or blueberries)
Raw sugar, approx. 1/3 c.

Grease two 12 cup muffin pans or use paper cups. Combine dry ingredients. In a small bowl, combine egg, water and butter. Make a well in the center of the dry ingredients and add egg mixture all at once. Stir with a fork until just moist. Gently fold with berries.

Fill muffins 2/3 full and sprinkle raw sugar on top. Bake at 400 degrees for 16-18 minutes.

Makes approximately 22 muffins.
