POTATO REFRIGERATOR ROLLS 
1 1/2 c. lukewarm water
2 pkgs. yeast
2/3 c. sugar
1 1/2 tsp. salt
2/3 c. soft shortening or butter butter
2 eggs
1 c. lukewarm mashed potatoes
5 c. all-purpose or bread flour

Make mashed potatoes as to eat. Stir yeast into water until dissolved. Add sugar, salt, shortening, eggs and mashed potatoes. Add flour and mix until dough is easy to handle. Cover and place in refrigerator for a few hours or overnight. Shape into rolls and let rise 2 to 3 hours. Bake at 350 degrees for 12 to 15 minutes or until brown. Dough will keep in refrigerator several days if only a portion is used.
