PETITE CHERRY CHEESECAKES 
2 (8 oz.) pkg. cream cheese
2 eggs
1 tsp. vanilla
1 can pie filling
3/4 c. sugar
1 tbsp. lemon juice
24 vanilla wafers

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line small (2 1/4 inch) muffin pans with paper liners. Place vanilla wafers in the bottom of each cup.

Fill cups 2/3 full with cream cheese mixture. Bake at 375 degrees for 15 to 20 minutes or until set. Top each with about 1 tablespoon pie filling and chill. Makes 2 dozen.
