BLACK BEAN SLAW | |
2 1/2 c. cabbage, finely shredded 1 (15 oz.) can black beans, rinsed and drained 1/2 c. carrots, shredded 1/2 c. red onion, chopped 1/4 c. cilantro, chopped 1/4 c. yogurt, plain, non fat 1/2 c. salsa, no salt added 2 tbsp. mayonnaise, reduced calorie 2 tsp. white wine vinegar 1 tsp. lime juice Combine cabbage, beans, carrots, onion and cilantro in a large bowl; toss well. Combine yogurt, salsa, mayonnaise, vinegar and lime juice in a small bowl; mix well. Pour yogurt mixture over cabbage mixture and toss gently. Cover and chill at least 2 hours. Garnish, with fresh cilantro sprigs, if desired. |
