BEEF - STEAK - POTATO SCALLOP 
1 lb. round steak, 1" thick
Flour
3 tbsp. shortening
3 sm. onions, shred thin
3 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
Dash thyme
Dash garlic salt
2 c. water
3 med. potatoes, pared & sliced thin
Salt
Paprika

Heat oven to 350 degrees. Cut meat into cubes; coat with flour. Melt shortening in skillet and brown meat. Add onion; cook and stir until onion is tender.

Pour into ungreased 2 quart casserole; sprinkle with flour and salt, pepper, thyme and garlic. Pour water over mixture. Cover. Bake 45-60 minutes or until meat is tender.

Increase over temperature to 450 degrees. Arrange potatoes on meat; sprinkle with salt and paprika. Bake uncovered about 30 minutes longer or until potatoes are tender. 4-6 servings.
