SWEET POTATO COBBLER | |
3 med. sweet potatoes 2 c. sugar 1 (5 1/2 oz.) pkg. Bisquick 1 tsp. lemon flavoring 1 tsp. vanilla flavoring 1 stick butter Peel and slice potatoes. Boil 15 to 20 minutes. Put Bisquick in bowl and mix with 1/3 cup water. Stir until mixed. Turn out on well floured board or cabinet top. Knead until firm. You may have to add a little more flour. Divide dough in half. In large casserole dish place half the potatoes and half the water the potatoes cooked in. (Also you may want to add milk with the water). Add 1 cup sugar and the flavorings. Roll out half of the dough VERY THIN. Cut in strips and cover potatoes. Now place the other half of potatoes, 1 cup of sugar and remaining 1/2 of water (and milk). Roll out other half of dough VERY THIN. Cut in strips and make top for pie. Cut up butter on top of pie and sprinkle with sugar. Cook in preheated oven on 400 degrees until brown. |
