CREAMY CHICKEN OR TURKEY RICE
CASSEROLE
 
3 qt. cooked (1 qt. raw) rice, long grain, cooked and drained
6 1/4 lbs. turkey or chicken, cooked, 1/2 inch diced
2 c. diced red pepper or pimento
1/2 (#10) can green peas, drained
1/2 gallon white sauce, med.
1 qt. diced celery, cooked
2 c. chopped onion, cooked
1 tsp. nutmeg
1 tsp. white pepper
2 c. bread crumbs, buttered

Combine all ingredients except bread crumbs. Stir to blend. Divide mix between 2 greased 12x20x2 inch steam table pans. Sprinkle with buttered crumbs. Bake in 350 degree oven for 1 hour or until hot and bubbly. Cut 25 portions per pan.
