SOURDOUGH HOTCAKES | |
2 c. sourdough starter 2 tbsp. sugar 4 tbsp. vegetable oil 1 egg 1/2 tsp. salt 1 scant tsp. baking soda (more if needed. Soda will sweeten a very sour starter) Place starter in nonmetal bowl. Add sugar, egg and oil. Mix well. Just before you start cooking the cakes mix the soda with 1 tablespoon warm water. Fold gently into sourdough. DO NOT BEAT. Bake on hot griddle and serve on warm plates. Can sprinkle a few berries of choice over each cake on griddle, then turn and finish cooking. See Starter recipe this section. |
