LOW FAT CRANBERRY MUFFINS | |
2 c. flour 1 c. bran 1 tbsp. baking powder 2 egg beaters 1 c. water 1/2 c. honey 2 tbsp. Butter Buds (dry) 1/2 c. sour cream, lite 1 lg. orange 1 1/2 c. fresh cranberries (pick & wash) Preheat oven to 400 degrees. Mix dry ingredients in large bowl. Stir in egg beaters, honey and Butter Buds and sour cream lite. Cut whole orange, into chunks (rind and all), removing any seeds. Grind to a mush in a food processor or blender. Add to bowl with cranberries. Stir ingredients until just combined. Do not over mix. Fill Pam sprayed muffin tins level. Bake 20 minutes. Makes 18 large muffins. |
