MINT SURPRISE COOKIES | |
3 1/4 c. sifted flour 1 tsp. baking soda 1/2 tsp. salt 1 c. shortening 1 c. granulated sugar 1/2 c. brown sugar, packed 2 eggs 1 tsp. vanilla 1 pkg. (9 oz.) chocolate mint wafers Sift flour, soda, salt together. Cream shortening and sugars together until light and fluffy. Add eggs and vanilla, beat thoroughly. Add dry ingredients and mix until well blended. Chill dough in refrigerator. Use approximately 1 tablespoon (level dough for each cookie. Press mint wafer into center of each and fold (place on greased cookie sheet) dough around to cover. Do not make cookies too large. If desired put pecan or walnut half on top. Bake. Remove from pan immediately after baking. Makes about 5 dozen. |
