MACARONI AND CHEESE CASSEROLE 
1 (8 oz.) pkg. macaroni (sm. elbow size)
1 c. mayonnaise
1 can cream of mushroom soup
1 sm. can chopped mushrooms
1 lb. grated mild cheddar cheese
1/4 c. chopped onions
1/4 c. chopped pimentos
1/4 c. chopped bell pepper
3 tbsp. butter
Ritz cracker crumbs

Cook macaroni until tender, drain and set aside. Melt butter, add onions and bell pepper and saute. Mix all ingredients, except cracker crumbs, and blend together well. Put into large casserole dish. Bake at 350 degrees for 30 minutes. Top with cracker crumbs and return to oven for 5 more minutes. CAN BE FROZEN!
