SWEET POTATO SOUFFLE 
3 c. sweet potatoes, cooked and mashed
1 c. sugar
2 eggs
1 c. milk
1 stick butter
1/2 tsp. salt
1 tsp. vanilla

Mix all ingredients and cook 30 minutes at 400 degrees.

TOPPING:

1 c. light brown sugar
1/3 c. plain flour
1/2 c. pecans
1/2 c. coconut
1/2 stick butter

Mix ingredients. Spread over top and bake 10 minutes.
