QUICK BANANA BREAD 
1 3/4 c. all-purpose flour
2 1/4 tsp. double acting baking powder
1/3 c. shortening
2/3 c. sugar
3/4 tsp. lemon rind
1-2 beaten eggs
1 c. ripe banana pulp

Preheat oven to 350 degrees. Have all ingredients at 75 degrees. Sift the flour then resift the flour with the baking powder. Blend the shortening, sugar and lemon rind until creamy. Beat in the eggs and banana pulp. Add the sifted ingredients. Beat the batter. Put in greased bread pan. Cook for 1 hour. Cool before slicing.
