STAND-BY LATIN AMERICAN
CASSEROLE
 
1 (10 oz.) cream of mushroom soup
1 (10 oz.) cream of chicken soup
1 lg. onion
1 (10 oz.) can tomatoes
1 1/2 lbs. ground beef
1 (10 oz.) can enchilada sauce
2 c. shredded cheese
12 or more corn tortillas, cut into eighths

Brown beef and onion. Then add the other ingredients except cheese and tortillas. Alternate meat and tortillas, meat layer on top. Sprinkle with cheese on top. Bake 300 degrees for 35 minutes. This freezes well.
