MICROWAVE MARINATED CHICKEN STIR
FRY
 
6 chicken breasts, skinned and deboned
3 tbsp. soy sauce
3 tbsp. Italian salad dressing
2 tsp. sesame seeds
2 tsp. lemon juice
1/8 tsp. ginger
1/8 tsp. garlic powder
1 med. green pepper, cut into strips
1 med. onion, cut into strips
1/3 c. water

Cut chicken breasts into 1 inch pieces. Place in shallow container and set aside.

Combine the next 6 ingredients in a jar; cover tightly and shake vigorously. Pour over chicken; cover and marinate in the refrigerator overnight.

Combine green pepper, onion and water in a large glass bowl. Cover with plastic wrap and microwave at high for 3-5 minutes or until crisp tender. Drain.

Remove chicken from marinade and add to pepper mixture. Cover with plastic wrap and microwave for 7 minutes on high. Stir and turn bowl, cook 7 minutes longer. Serve with rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
