CHEESE STUFFED POTATOES 
4 med. baking potatoes, baked
1/4 c. butter
1/2 c. milk
Salt & pepper to taste
1 c. grated Cheddar cheese
1 tbsp. finely chopped onion

Cut potatoes in halves lengthwise and carefully scoop out insides. Set shells aside. Mix potatoes, butter, milk, salt and pepper until fluffy. Stir in 3/4 cup cheese and onion. Spoon mixture into potato shells. Sprinkle remaining cheese on top. Put stuffed potatoes on serving dish. Microwave for 1 minute and 30 seconds to 2 minutes on high or until cheese melts and potatoes are hot. Sprinkle with paprika.

Since microwave ovens vary in power, you may need to adjust your cooking time.
