BAKED RICE CUSTARD 
2 c. milk
1 c. sugar
3 eggs
1 tsp. cinnamon
2 c. cooked rice
1/2 c. raisins
2 tbsp. butter
1/2 tsp. nutmeg

Preheat oven to 350 degrees. Cream sugar and butter, add eggs, one at a time. Blend in milk, add cinnamon, nutmeg, raisins and rice. Pour in 2 quart casserole. Bake 30 to 40 minutes until firm. For sauce add 1/2 cup sugar, and 1/2 stick butter. Blend in one egg, so it doesn't curdle. Add rum flavoring. Pour over custard.
