ZIPPY TACO SALAD 
1 lb. ground beef (or ground turkey)
1 (15 oz.) can kidney beans, drained
1 jar salsa
1/2 lb. Velveeta cheese, cubed
3 c. shredded lettuce
3 c. chopped tomatoes
Taco chips
Salsa

Brown meat, drain. Stir in beans and sauce. Cover; simmer 10 minutes, stirring occasionally. Add cheese; stir until melted. For each serving, top chips with lettuce, tomato, and meat mixture. Top with salsa if desired.
