ORANGE ROUGHY WITH ASPARAGUS 
1 lb. fresh asparagus (or 1 lb. fresh green beans)
2 tbsp. lemon juice
1 tbsp. butter, melted
1/4 tsp. dried whole thyme
2 cloves garlic, crushed
1/8 tsp. pepper
6 (4 oz.) roughy fillets
1 tbsp. chopped unsalted cashews

Snap off tough ends of asparagus. Remove scales and cut asparagus (or green beans) into 1" pieces. Combine asparagus and next 5 ingredients. Set aside.

Arrange fillets in a 9" x 13" baking dish that has been coated with cooking spray. Spoon asparagus mixture over fillets. Bake, uncovered at 350 degrees for 20 minutes or until fish is flaky. Transfer fillets and asparagus to serving platter; sprinkle with cashews.
