ENCHILADA'S | |
1 or 2 potatoes 1 to 1 1/2 lb. ground hamburger 1 large can of enchilada sauce flour 1 dz. corn tortilla 1 1/2 c. grated Colby & Monterey Jack cheese 1 small can sliced black olives 1 tsp. chopped garlic Griffin's Old Santa Fe Picante Sauce Cook, peel and mash potatoes. Brown Ground Beef and garlic. In a saucepan put enchilada sauce, add 1/2 can water, and enough flour to thicken. After sauce is thickened place corn tortilla in sauce to soften. Lay softened tortilla in pan, add heaping tbsp. of meat mixture and mashed potato mixture sprinkle with cheese and 2 or 3 olive slices and wrap. After all tortillas are wrapped pour remaining sauce on top. Layer cheese and remaining olives. Bake for 15 minutes at 350°F, in a 9x13 pan. Garnish with Griffin's Old Santa Fe Picante Sauce. |
